Work Week Menu Plan - May 31-June 4

I think it's just time to accept that the rain will never end.  And that brief moments of clear weather must be embraced and enjoyed.  It's like, a lesson in life.  Or something.  So this week, I embraced and enjoyed 2 evenings of grilling.  Huzzah!

Sunday was filled with kitchen fun accompanied by The Way We Were (how have I not seen that before?).  On the prep list was making patties & prepping slider toppings for Monday. 


And the pork dish for Tuesday.

Dinner – Blackened Chicken Thighs with Baked Beans and Cauliflower

I also seasoned the chicken for dinner.  And we grilled!



Kept it simple with some Bush's Grillin' Beans (I love those).

Tuesday's dinner was super fast and easy due to my pre-prepared pork packet.  (Alliteration!)  I was a little nervous because the recipe had a lot of fish sauce.  And it was sorta stinky.  But it turned out absolutely delish!  This one is going in the rotation for sure.  (If you look at the recipe and think that it has a lot of sugar, I agreed.  I just did a sprinkle.  I'm sure it wasn't truly "caramelized" because of that.  But still tasted great!)

  • Make ground turkey/beef slider patties

Did you have a good menu this week?  On my end, the Sunday prep is continuing to be key for me to get dinner on the table at a decent hour.  I'm having a hard time deciding what we're going to eat next week.  I mean, where do you go after sliders and Vietnamese pork?  I do believe it will involve cabbage though.  I have half a head I need to do something or another with.
