It has been non-stop, all day, errrrday. The dogs are goo. My floors are goo. And the grill will never be fired up again. (On the plus side though, the grass is incredibly green. If you're into that sort of thing.) So, with that weather in mind, easy in-door meals were on the menu this week. So, similar to last week - slow cooker, lots of leftovers and National Burger Day, oh my!
Memorial Day (and Monday)
Dinner – Roasted Blackened Chicken and Red Potatoes with Spicy Broccoli
Do you guys roast whole chickens? If not, you should. They're easy, delicious and, if you have your stuff together, you can make some great chicken stock. (I do not, personally, currently have my stuff together. But someday. *Fingers crossed*) I used to be intimidated by the thought of roasting a whole bird but this super-simple recipe gave me the push to do one myself. And I haven't looked back since. I gave mine a nice massage with our go-to - blackened seasoning - and tossed it on some red potato chunks.
For me, a roast chicken is source of excitement and way easier than the final product looks/tastes. (This meal was enjoyed with The Apartment starring Jack Lemmon and Shirley MacLaine. And that's just a great night.)

Once again, we turn to the glorious slow cooker for a Tuesday classic - tacos (!). We do a lot of tacos around our lil house. But, of late, we've had a lot of the ground turkey variety. Hubs requested good old low & slow cooked chicken. And, to get a little crazy, I did a nice lime-ginger cabbage slaw (instead of lettuce) to go with it.

Dinner – Spaghetti (Squash) and (Turkey) Meatballs
This is seriously one of my newer faves. (Have I mentioned these already? Probably. They're, like, all I talk about.) These Honeysuckle White pre-made/cooked meatballs are reeeeally tasty. For that sort of thing.
I tossed the spaghetti squash in the oven while on the treadmill and then took it out to cool while I cleaned up. Once clean, I made and warmed up the sauce in my large cast iron dutch oven with the turkey meatballs. Boom. Done. Low carb, but in a way that you totally forget it.
