And a meatless, low carb lasagna that turned out really good and tastily better than I had dared to hope. Instead of meat, I used a mix of spinach, more zucchini and onions. And even the hubs liked it.

But my favorite, my truuuuuue favorite, was this whole chicken in the slow cooker. I've been wanting to give this a whirl since my girl friend, Anita, raved about how much she's loving coming home to this meal (and the smell).
For the bottom layer, we had red potatoes, baby carrots, onions and a healthy splash of chicken broth. And, on top, a free range, antibiotic free, blah-blah-blahhhh chicken. I threw a few lemons in and seasoned it all with some spicy Cajun seasoning. (Because, around here, if it's not spicy, it's probably dog food.) Cooked it on low for about 4 or 5 hours. And voila!
It's a sorta odd picture. But you get the drift.
Y'all. It was so good! Flavorful from top to bottom, juicy chicken and some lovely leftovers for lunch. What more can you ask for? Oh, yeah. It was also super easy.
