Quick, Cheap Chicken Leg Quarters

Update on the job, y'all...  It's permanent!  They made me an offer.  I accepted.  And you're now looking at a fully employed lady.  After a 4 month "vacation", I am thrilled to have landed somewhere so exciting.

But you know what working means, right?  It means I gots to plan my meals a little better around a job.  Yessss.  I am, like, so ready.

The hubs has been out of town for training this week so I'm back to meals for one.  I managed to go a little healthier than frozen pizza this time.  I even had something in mind - some chicken quarters I snagged for cheap & froze a couple weeks ago.



$1.40!  Now that's a deal.

Yesterday, I was talking to my girl friend, Anita, about cooking whole chickens in the slow cooker.  She mentioned putting her chicken on potatoes in the cooker & how tasty they were from soaking up all the good chicken juices & seasonings.  That made me think about using that concept for my quarters.  As in, throw my chicken on a bed of carrots.  (I didn't have any potatoes.)

I don't really trust the store to season for me - my experience has always been bland - so I added a nice coating of paprika, garlic & a sprinkling of kosher salt.  Preheated the oven to 425º & tossed those babies in for a little over half an hour. 


 I wish everything wasn't so orange because I don't feel like it looks as pretty as it tasted.  Let's look again...


This was a perfect meal for one...  Twice.  Almost no prep, bake & you have 2 tasty dinners.  Perfect for the working girl!
